Inspiration for This Recipe

I can’t say I love cauliflower. It seems to be the vegetable I always let almost turn before I finally cook it.

Maybe that’s because it lasts longer in the fridge than a lot of other vegetables, so in my mind I keep thinking, Oh, we can put this off one more day.

And then suddenly it’s starting to brown. This cauliflower was definitely on its last legs, so roasting it felt like the perfect rescue mission. Just make sure to cut off any brown spots first.

Most vegetables definitely taste better fresh, but in this dish, all the olive oil and strong spices covered up the “oldness” wonderfully.

I originally made this cauliflower as part of a tomato and shrimp dinner. The rest of the meal was just okay.

The cauliflower, though?

That was the thing I couldn’t stop eating.

It’s unusual for cauliflower to steal the show, but this time it absolutely did.

Serves 2-4

Ingredients

  • 1 large head cauliflower, cut into florets

  • ½ teaspoon ground cumin

  • ½ teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • ÂĽ teaspoon salt

  • Freshly ground black pepper, to taste

  • ÂĽ cup olive oil

  • Small handful parsely, chopped

  • Cooking spray, such as avocado, olive, or sunflower oil

How to Make It

1. Prep the cauliflower

Preheat the oven to 425°F.

Cut the cauliflower into evenly sized florets so they cook at about the same rate.

2. Season

Add the cauliflower to a large bowl and toss with the olive oil, cumin, smoked paprika, garlic powder, salt, and black pepper.

Make sure the cauliflower is well coated.

3. Roast

Lightly spray a large baking sheet with cooking spray.

Spread the cauliflower out in a single layer, leaving a little space between the florets so they roast instead of steam.

Roast for 20–25 minutes, turning once halfway through, until browned and crisp around the edges.

4. Finish

Remove from the oven and sprinkle with chopped fresh parsely.

Taste and add a little more salt or pepper if needed.

Serve hot.

What I Thought

This was the surprise of the meal.

I made it to go alongside a tomato and shrimp dish, but the cauliflower ended up being the part I liked the most.

The smoked paprika and cumin gave it a warm, savory flavor, and the edges got really browned and almost sweet. The fresh parsely added just enough brightness at the end.

Honestly, I don’t usually get excited about cauliflower, so the fact that I kept going back for more says a lot.

I would absolutely make this again.

Pantry Swaps & Substitution

Broccoli: You could definitely swap broccoli for the cauliflower. Just know it will taste a little different. Broccoli has a stronger, greener flavor with more bitterness, while cauliflower is much milder and gets almost sweet and nutty when deeply roasted.

Spices: If you don’t have smoked paprika, regular paprika will work, although you’ll lose some of that smoky flavor.

No fresh parsely: Leave it off and finish with a squeeze of lemon instead. The cauliflower will still have plenty of flavor from the smoked paprika, cumin, and garlic.

Olive oil: Avocado oil would work well too.

Add heat: A pinch of red pepper flakes or Aleppo pepper would be really good here.

Other vegetables: You could use this seasoning combination on carrots, zucchini, Brussels sprouts, or even sweet potatoes, but I think cauliflower works especially well because its mild flavor really lets the spices shine.

Storage & Leftovers

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

For the best texture, reheat in the oven or air fryer so the edges crisp back up. The microwave works too, but the cauliflower will be softer.
